Pumpkin Pancakes: Use 4 cups of pancake mix, 1 cup of canned pumpkin, 1 teaspoon of cinnamon, 2 eggs, honey (optional) and butter or margarine (optional). You will need measuring cups, a large bowl, a spatula, measuring spoons, large mixing spoon and an electric skillet. To make the pancakes, mix the pancake ingredients with 1 teaspoon of cinnamon in the large bowl. Add 2 eggs and the 1 cup of canned pumpkin meat; stir well. Pour small spoonfuls on the hot skillet. Flip the pancakes when bubbles form on the tops. When cooked, eat with honey or butter.
